314. Barrington Family Recipes Contest: Kristin Smith’s Family Fall Pasta

Since Thanksgiving is just days away, it’s time to start sharing the recipes we’ve been receiving in our Barrington Family Recipes contest here at 365Barrington.com.  We’ve been collecting recipes from our readers since September and have been busy – behind the scenes – taking beautiful photographs of each dish.

We have seven generous gift card prizes to give away to seven winners in our contest, courtesy of Heinen’s grocery store in Barrington.  The contest is still open for submissions and, to enter, all you have to do is share a favorite recipe for our collection using the form below.

The very first recipe we received for our contest was submitted by a Barrington mom who loves to cook named Kristin Smith.  The recipe she submitted is something she calls Family Fall Pasta with roasted butternut squash, crispy bacon, shallots and sage and here’s what she loves about it:

“This recipe comes from the amazing mom and grandmas that I grew up with who taught me to cook and inspired me to learn more from other great cooks. Our Family Fall Pasta is a made-up, seasonal recipe that was a success in my family of 6 (our kids range from ages 18 to 6).  Hope you enjoy it as well.”

Kristin Smith’s Family Fall Pasta

Ingredients:

Butternut squash

olive oil

Farfalle pasta

4 0z of great bacon

2 Shallots

10 leaves of sage

3 Tbs. of butter

1/4 to 1/2 Parmesan cheese

Directions:

Cut up a butternut squash into 1/2 inch pieces. toss with 2T of oil. Salt and pepper. Roast at 400 degrees for about 15 minutes or until tender and caramelized.

Meanwhile, boil salted water for a small sized pasta, like farfalle. When it boils, put in 1# of pasta until al dente. Reserve some extra pasta water to add later.

Cut up 4 oz of great bacon into 1/2 inch slices and cook until crispy. Drain and set aside.

Dice two shallots, along with 10 leaves of sage. Brown with 3T of butter. Set aside.

Grate 1/4 to 1/2 cup of Parmesan.

Toss everything together at the end. Add about 1/4 cup of pasta water.

Sprinkle with a pinch of pepper flakes and salt and pepper as needed.

“When I received the list of recipes to be photographed for 365Barrington.com’s Barrington Family Recipes contest, I was immediately intrigued by Kristin Smith’s Family Fall Pasta.  I happened to have all the ingredients on hand so I decided to give it a try.”

“With Thanksgiving right around the corner I thought the combination of fresh sage, brown butter and butternut squash was a perfect combination.

When I was following the recipe and began to assemble all the ingredients I thought there might not be enough sauce for the amount of pasta.  Once it was all incorporated I realized that I was totally wrong.  It is fantastic!

The crisp bacon, brown butter with shallots and sage and the roasted butternut squash all come together to make a great layering of flavors.  I will definitely keep this one in my family’s recipe box.”
