Seriously, you have to try Wild Asparagus’ cheese puffs. They’re life changing.  And you’re sure to discover your new favorite wines during the 11th annual Uncork, thanks to more than sixty tasting selections on this year’s wine list expertly chosen by Jen Blair, Certified Sommelier at Vin in Barrington.  The perfect pairing for those Wild Asparagus cheese puffs?  Jen recommends the Catena Mendoza 2013 Chardonnay.  It’s creamy and delicious. Yum. Makes me want another cheese puff…

Wild Asparagus is a full-service caterer, providing everything from complete event planning and coordination to take-along trays and oven ready fare. They opened in 2008 near Jewel-Osco in the Village, but recently made an exciting move to a brand new space at 22000 N. Pepper Road in Lake Barrington.

This will mark Wild Asparagus’ fifth year participating in Uncork Barrington, says chef/owner (and Barrington native) Jeramie Campana. “It’s a great event for us. We enjoy doing it, and it’s been a way for us to get our name out and become better known,” Jeramie says. “It’s a way to help out the Village and connect with customers too.”

“Our first year, we were packing up to leave and we had a few full trays of cheese puffs left. People were trying to buy them right there and then, including the baking sheets,” Jeramie recalls.

Like I said, they’re that good. You lose your head a little bit and start thinking you need a caterer-size sheet of the golden beauties.

You won’t find these cheese puffs anywhere else, as the recipe is strictly top-secret. The offer them in “original”, “jalapeno” and “smoked salmon” varieties and Jeramie even makes his employees sign a non-disclosure agreement before they can prepare them. You’re in luck, though, as Jeramie will sell a dozen cheese puffs for $10 ONLY at Uncork – that’s $4 off the regular Wild Asparagus price (although after tasting them, you’d pay whatever he asked).

Honestly, the only thing that can improve the cheese puffs is a sip of Catena Mendoza Chardonnay 2013. Vin manager Jen Blair selected this wine because chardonnay pairs well with cheese and pastry. “This wine goes through secondary fermentation which softens it and gives toasty, round and creamy notes,” Jen says. “This complements nicely the flavors of the rich, savory puffs.  Additionally, this wine has just enough acid to cleanse your palate to keep the pairing from feeling heavy.”

You can taste this wine at Uncork, but if you can’t wait, you can also find this 89-point wine (Wine Spectator) on Vin’s Great for Grilling table for $13.99.

Vin Chicago will also be taking wine orders during Uncork, with a 5% case discount and 10% to benefit the charities that Uncork supports.

Uncork Barrington was founded by the Barrington Village Association (BVA) as a way to bring the Barrington community together in the heart of downtown, and also provide support for local charities and educational organizations. The BVA donates a large portion of the profits from Uncork Barrington to such organizations as the Barrington Area United Way Barrington Career Center, Barrington Area Council on Aging, the District 220 Educational Foundation, Care Place and many more.

Uncork tickets are $40 through July 9, or $50 the day of the event. For $90, you can purchase a VIP ticket (online only) for exclusive access to the VIP tent and tastings of fine wines. Designated driver tickets are also available for $25.00.If you’d prefer to pick up your tickets in person, you’ll find them at VIN (311 East Main Street) or at Heinen’s Fine Foods (500 N. Hough Street).

Upon entering the event, you’ll receive a souvenir glass to use during tasting and a “passport” to guide you through the tasting experience. You’ll have the opportunity to taste 50 wines paired with flavorful foods served by local restaurants and caterers. Select wines featured at Uncork will be available for purchase by the glass, and some foods offered by the food sponsors will also be available for purchase.  Non-alcoholic beverages will also be available for purchase.
