I’ve always wanted to make homemade Irish Soda Bread and finally found a recipe I’m going to try thanks to a reader taking part in our Family Recipes contest here at 365Barrington.com.  This is not just any ordinary Irish Soda Bread.  Oh no.  This is Christine Stofan’s Irish Soda Bread and it’s a holiday favorite in her family.  Photographer Sally Roeckell plated the bread along with a side of butter and honey (Christine’s recommended accompaniments) and I now have a major craving for an Irish Soda Bread breakfast.

We asked Christine to tell us where she learned to make her Irish Soda Bread and what she loves about it and here’s what she had to say:

“This recipe comes from a traditional Irish family who has made this bread for many years for all occasions. It was St. Partrick’s day and I prepared our traditional family meal and realized I forgot to pick up the bread.”

“I called my girlfriend who would always make her own bread and I would always say I wish I could bake like you. So here was my opportunity to try.  She gave me the recipe and here I went to work making the bread for our dinner.”

“It came out delicious and from that day on I’ve been making this recipe of Irish Soda Bread for all our family occasions. My family has come to enjoy it at all of our parties and to have as a dessert or part of our meal.”

Christine Stofan’s Irish Soda Bread

Ingredients:

3 cups flour
3 teaspoon baking powder
2/3 cup sugar
1 teaspoon baking soda
1 teaspoon salt
2 tablespoon melted butter + buttermilk to make 1/3/4 cups
2 beaten eggs
Raisins – no more then 2 cups

Directions:

Mix dry ingredients and set aside, combine wet ingredients in measuring cup.

Add wet ingredients to the dry ingredients and stir until almost moistened.

Add raisins and stir until just moist. Do Not Overstir.

Pour into greased pan and score top of dough w/knife.

Greased pan – 1 hour to 1:10 minutes at 350 degrees. Remove immediately from pan

Done when toothpick comes out clean.
