Cooking with Heinen’s | Simple Summer Salads We Love

On a hot sunny day the last thing even a seasoned cook wants to do is slave over a hot stove. I would much rather play paddle ball on the beach or sip cocktails on the deck. Summer is a time for gatherings. Why spend all day chopping fruits and vegetables or mixing up salads from scratch when Heinen’s has done it for us with so many ready-made options and freshly cut produce ready to throw together?

Today I’m going to show you how you can quickly put together a delicious salad fit to bring to your next party and you can get most everything chopped and prepped in the ready-made salad section of your local Heinen’s.

Simple Watermelon Salad

INGREDIENTS

  • 4-5 Cups watermelon cut into ¾-1 inch cubes
  • 4 turkish cucumbers ( or one English) cut into ¾ inch cubes
  • ¼ Cup thinly sliced red onion
  • ½ Cup chopped mint
  • ½ Cup chopped Italian parsley
  • ¼-½ Cup crumbled feta cheese
  • ¼ C toasted pistachios
  • ¼ C olive oil
  • ⅛ C red wine or white balsamic vinegar
  • ½ tsp salt, more to taste
  • cracked pepper
  • a pinch ground clove

METHOD

  • Place watermelon, cucumber and onion in a large bowl. Add herbs, feta and pistachios.
  • Gently mix.
  • Add olive oil, vinegar, salt and pepper and clove then mix to incorporate. Add to salad as desired.

Breeze through and you will see it’s difficult to make up your mind there is always so much to choose from. We love the crab cakes and grilled vegetables. The salmon is perfect for a quick and easy dinner with absolutely no fuss.

If you just need a quick side dish to add to your BBQ the salads from Heinen’s Salad Bar are delicious. Broccoli salad, bean salad or any of the grain salads go well with just about any dish. If you want to serve it in a bit more festive way, grab a head of baby bib lettuce and line your bowl like I did for the pasta salad here.

Kale salad is one of my favorites but getting the dressing incorporated can be a bit of a chore. With Kale you need to massage the olis into the leaves to soften them up a bit so they are easier to enjoy. That’s why starting with a base of Heinen’s premade kale salad and adding my own extras is always a win. Here I simply added dried cherries to what was already offered.
