We checked our calendars this morning and realized that there are 12 days left before Christmas. And then we thought, if we’re ever going to to publish that “12 Days of Recipes” series we’ve been thinking about, it’s now or never. So here we go with DAY ONE of 12 Days of Recipes.

12 Days of Recipes

We’re starting with a recipe for the perfect holiday dessert. This Peppermint Freezer Cheesecake is so delicious, you might not be able to wait until Christmas to make it!

Because it’s a freezer cheesecake that means it can be made today, and just pulled out at serving time. I love recipes that can be made ahead!  Did I also mention that it’s no bake? It’s extremely easy to make, and has a rich minty chocolate taste.  It’s a favorite of my family and friends, and I hope it will be yours too.

Peppermint Freezer Cheesecake

peppermint cheesecake recipeIngredients:

 

2 cups chocolate wafer cookies
1/3 cup sugar
1/4 cup softened butter
1 (8-ounce) package cream cheese
1/2 cup crushed Peppermint candy
1 (14-ounce) can sweetened condensed milk
1 teaspoon Peppermint extract
2 cups whipped cream
red food coloring (optional… if you prefer not to use food coloring,
omit that step and cake will be white)

 

Combine cookie crumbs and sugar. Add butter and mix well. Line a 9-inch cake or springform pan with foil. Press crumbs firmly on bottom and halfway up sides of pan. Chill. In a large bowl, beat cream cheese, condensed milk and extract until smooth. Add food coloring one drop at a time, and continue to blend until pink. Fold in whipped cream and one half peppermint candies. Pour filling into pan. Top with remaining peppermint candies. Cover tightly and freeze.
