We’re sharing a Christmasy Stuffed Peppers recipe on Day 4 of our “12 Days of Recipes” series not just because it’s red and green, but because it’s super easy, and you deserve a break this week! (Seriously can you fit in one more thing?)

And if you’re a person who browns many pounds of ground beef at once (never too late to start) and freezes it to use in future recipes, this colorful dish will make your life easier later.

This dish is widely popular but much forgotten. Often when I mention it people say “Oh, I forgot about those… but I love them.” Well, I’m glad to remind you. Green peppers are beautiful and large in the stores right now, and priced nicely too.

Post - Stuffed Peppers

This recipe is from the 70 Meals, One Trip to the Store cookbook, which contains simple recipes with simple ingredients and great flavor, and helps you get dinner done with less money spent and fewer trips to the store.

Stuffed Peppers

Ingredients

3/4 lb. cooked ground beef
1 tablespoon butter
1/2 onion, diced
2 cups cooked rice
2 green peppers
1 can diced tomatoes, drained
1 can tomato paste
8 tablespoons honey

Melt butter in pan on stove, and brown onions, about 5 minutes. Mix beef, onions and rice. Meanwhile, blanch peppers in boiling water for 3 minutes, and cool.  Cut peppers in half, remove caps and seeds; rinse. In a separate bowl, mix tomatoes, tomato paste and honey.  Add half tomato/honey mixture to beef and rice and blend.  Add equal portions of beef and rice mixture to each pepper half.  Arrange in baking dish.  Top with remaining tomato mixture. Bake at 350° F for 45 minutes.
