It’s Day 3 in our 12 Days of Recipes holiday food series and we’re looking at a recipe that wins our award for one of the “best dishes in a supporting role”.  Carrot and Napa Cabbage Salad is a shining compliment to many main dishes traditionally served during the holiday feast.

This Carrot and Napa Cabbage Salad from my 30 Spectacular Salads cookbook is one of my favorite salads to put on a holiday table. Using just a few fresh ingredients with bold flavors, it is a beautiful, and yummy complement to any main course. While stores don’t carry a lot of them so they are not that visible, almost all stores do carry Napa cabbage. It has a greater health value than lettuce, with a strong vitamin C content, fiber and protein. When I make this salad for a cooking demo it is always everyone’s favorite. Try it this holiday season, and I hope you’ll agree!

Post 300 - Carrot & Napa Cabbage SaladCarrot and Napa Cabbage Salad


1 cup carrots, sliced into rounds
1 head Napa cabbage, chopped OR a combination of 4-5 cups chopped Napa
Cabbage and chopped Romaine
5 ounces crumbled feta cheese, crumbled (seasoned or plain)

Basil Dressing

1 tablespoon olive oil
2 tablespoon balsamic vinegar
3 fresh basil leaves finely chopped
1/8 teaspoon pepper
1/4 teaspoon salt
1 large clove garlic, pressed
Place lettuce and/or cabbage in a large bowl. Place carrots on top in center.  Sprinkle with cheese.  Top with Basil dressing
