We’ve cooked up a new contest here at 365Barrington.com inspired by the popular and 10th annual UnCork Barrington wine tasting which is TWO WEEKS away.  It’s happening from 6 to 10 p.m. on Friday, July 11th. So we thought this would be a great time to kick off our new “Buy 2 to Win 2” game with a pair of UnCork Barrington tickets to give away to one lucky winner.

With a new VIP top shelf wine tasting tent and Chicago’s BK Blues Band scheduled to perform, this year’s UnCork Barrington is going to be bigger, better and more awesome than ever.  (CLICK HERE for more about the new wine, food and entertainment highlights planned for this year’s UnCork Barrington.)

Tickets cost $40 in advance or $50 the day-of the event. There’s also a $25 “Designated Driver” ticket for guests who do not plan to taste wines.  And, brand new this year is a $90 VIP ticket offering access to a special VIP wine tasting tent where there will be an assortment of top shelf wines and a special selection of food for tasting.  I hear these VIP tickets are selling fast and they’re only being offered in limited quantity.

For a chance to win TWO TICKETS, all you have to do is purchase a pair of tickets ONLINE between now and the end of the day this Sunday, June 29th.  On Monday, we’ll enter your name into a drawing to win a pair of tickets so you can invite another couple or two friends to join you at UnCork Barrington, 2014.

They could also use some extra help with volunteers interested in pouring this year’s featured wines. Organizers are currently seeking about 20 volunteers to pitch in as sommeliers pouring wines during this year’s UnCork Barrington from 6 to 10 p.m. on July 11th. For each volunteer who helps out, they’ll donate $50 to the charity of your choice and all you have to do is show up to work the event after taking part in a fun and quick training session at McGonigal’s Pub on Tuesday, July 8th.  CLICK HERE for more info about UnCork’s Volunteer program or email Volunteer@UncorkBarrington.com to sign up.  It’s a great way to experience UnCork and, if you ask me, it often looks like the volunteer sommeliers are having the most fun.

Red Curry Quinoa Soup 👩‍🍳. Look for recipe in my previous post👩‍🍳. Super easy, packed with nutrients and low in sodium❤️heart healthy meal. Just use low sodium culinary stock and salt free DASH seasoning blend🙌. Be creative with your cooking. I replaced curry paste with tomato paste and fresh ginger with ginger spice and it was great! Snow ❄️Snow ❄️Snow Since we are expecting A LOT ⛄️☃️ of snow this evening, this delicious soup is already cooking blsnutrition kitchen.
Your prep time is only 15 🙌🙌minutes and in 30-45 minutes it can be on your table as well🙌
Recipe by Sara Haas, RDN, LDN/Living Plate.
Red Curry Quinoa Soup
Servings: 6

Ingredients
• 1 Tbs olive oil
• 1/2 yellow onion, diced (about 3/4 cup chopped)
• 1 green bell pepper, seeded and diced
• 1 medium sweet potato, diced (about 1 1/2 cups chopped)
• 2 cloves garlic, chopped
• 1 Tbs red curry paste
• 2 tsp ginger, fresh, peeled and chopped
• 1 cup quinoa
• 4 cup vegetable broth or chicken broth or water
• 1 lime, juiced (for 2 Tbs)
• salt, to taste
• 1/4 cup cilantro, fresh, chopped
✅ Directions
Prep
1. Dice onion, bell pepper, and sweet potato.
2. Chop garlic.
3. Peel and chop ginger.
4. Chop cilantro.
✅ Make
1. Heat the oil in a pot set over medium-high heat. Add the onion, pepper and sweet potato and cook, stirring frequently, about 10 minutes.
2. Add the garlic, curry paste and ginger and cook, stirring, for 1 minute. Add the quinoa and cook 1 minute more. Stir in the broth and bring to a boil. Reduce heat to a simmer and cook for about 20 minutes or until potatoes are tender and quinoa is cooked.
3. Remove from heat and add the lime juice. Season with salt to taste and garnish with fresh cilantro before serving.
