With Community Church of Barrington’s 2014 Cookie Walk coming up on Saturday, December 13th, we’re in the mood for some COOKIES!  The cookie walk opens at 10 a.m. and it’s the best way to bring home boxes filled with beautiful homemade cookies in Barrington without lifting a finger in the kitchen.  If baking is on your agenda this week, the head of the Cookie Walk committee is sharing her recipe for Coconut Crème Sandwiches, one of the most popular cookies you’ll find at the walk.

Jayne Majzan’s Coconut Crème Sandwiches

Ingredients:

2 Cups all purpose flour
½ t. baking powder
½ t. salt
1 Package (7 oz.) shredded coconut
¾ c. (1-1/2 sticks) unsalted butter, room temp.
½ c. granulated sugar
½ c. brown sugar
1 egg
1 t. pure vanilla extract

Creamy Vanilla Filling

½ c. (1 stick) unsalted butter, room temp.
1 cup confectioners’ sugar
½ t. pure vanilla extract

Directions:

Filling: Using electric mixer, beat ½ c. butter until light and fluffy. With mixer on medium, beat in 1 cup confectioners’ sugar ½ c. at a time, scraping down bowl as necessary. Add ½ t. vanilla; increase speed to high and beat until filling is light and fluffy; about 5 minutes.

Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking powder and salt; set aside. Place ½ cup coconut into a small bowl; set aside. Place remaining coconut in a food processor, pulse until coarsely ground; set aside.

Using mixer, beat butter and sugars until light and fluffy. Beat in egg and vanilla. With mixer on low, gradually add flour mixture and ground coconut; mix until just combined.

Drop dough by small tablespoons onto baking sheets; flatten with fingers. Bake until lightly golden around edges, 12-14 minutes, switching sheets on racks about halfway through cooking. Transfer cookies to wire rack to cool completely.

Spoon vanilla filling onto one cookie; flatten with the other until filling is just outside the cookie edges. Roll edge in reserved coconut; chill until ready to serve.

There will be over 80 varieties of cookies for sale at Saturday’s walk and you can purchases boxes to fill for $12 each. The ladies at the church hope to raise several thousand dollars during Saturday’s Cookie Walk. In February, they’ll select local causes to which they will donate all of the money raised.
