A Christmas Brunch tradition for my family is Sausage Breakfast Strata. At Organizing Dinner, Strata is a dish I love and include in my classes because it is one I call a palette. Like an artist’s palette where you can add any array of colors, there are dozens of combinations you could include in a strata. It’s as colorful as the dishes we hope you’ll find on your holiday table and that’s why we chose this beloved brunch dish for the finale and Day 12 of our 12 Days of Recipes series here at 365Barrington.com.
The following recipe calls for sausage and cheddar cheese. You can substitute other meat, other cheeses, and/or any array of vegetables or keep it as simple as you wish.
Some of my other favorite strata combinations include Spinach and Gruyere, Bacon and Swiss, or Pepperoni, Tomato and Mozzarella.
And I also love strata for using up leftover bread or buns. I don’t know about you, but I always end up with one or two hamburger buns in a pack of 8. So I freeze the leftover buns, and use them when I make a strata.
This dish can be made the night before and refrigerated.
Sausage Breakfast Strata

1 pound pork sausage (I use the regular Jimmy Deans, but flavored or Italian-style is fine, to your preference)
4 1/2 cups cubed bread
2 cups shredded sharp cheddar cheese
10 eggs slightly beaten

1 teaspoon spicy dry mustard (such as Coleman’s)
1 teaspoon salt
1/2 teaspoon pepper
