Here’s a great way to bring something unique to your holiday buffet or table.  A mashed potato bar can be loads of fun and it’s our featured item for Day 6 of our 12 Days of Recipes here at 365Barrington.com.

12 Days of Recipes - Day 6

I recently helped throw a baby shower for my cousin who craved mashed potatoes throughout her pregnancy. We decided the mashed potato bar was the way to go for the menu, and it was a huge hit.

Favorite toppings were the French’s Fried Onions and Sundried Tomatoes.  Another idea I’ve seen at weddings is to serve both the scoops of mashed potato and the toppings in martini glasses.

Following is a list of other items we used or you could try. Just make a heaping amount of mashed potatoes, and place all toppings in serving bowls with spoons…

Sliced Olives
Dried Cranberries
Shredded Cheddar Cheese
Crumbled Gorgonzola Cheese
Crumbled Feta Cheese
Diced Green Onions
Diced Tomatoes
Crumbled Bacon
Jalapeno Slices
Crispy Wonton Strips
Sour Cream
Dill Dip
Shredded BBQ Pork
Sliced Avocado
French’s Fried Onions
Sundried Tomatoes

 

Creamy Mashed Potatoes

8 servings

Ingredients:

8 medium potatoes, peeled
2 tablespoons Vegeta or other Vegetable broth powder
2 tablespoons butter
2 tablespoons cream cheese
1/2 cup milk
1 teaspoon salt
1/2 teaspoon pepper

Cut peeled potatoes in half and place in large pot. Cover with water, and add 1 tablespoon broth powder. Bring to a boil on stove.  Continue to boil for 12 minutes or until potatoes are fork tender. Remove pot from stove, and pour out all but 1 cup water. Add remaining broth powder and other ingredients to pot. Blend potatoes with a potato masher or mixer.
